Making a perfect apple pie is actually a simple task using ingredients that are inexpensive and readily available. If you use a softer apple it may produce more juice, so use a bit more flour inside the pie to compensate. Wash and dry the apples before peeling and slicing. Tools such as an apple peeler and corer are nice to have, but not necessary. A paring knife is best for slicing. It will give you more control than a serrated blade, and help to prevent cut fingers. If you slice the apples thin, the crust will stay more “domed” and not lay on the apples as they bake. Thickly sliced apples may squash down more and create a more dense pie.
